What do you know about Nova Scotia wine?
@aimeebourque, the lovely folks at Benjamin Bridge aaand Lightfoot & Wolfville Vineyards gave me a really great introduction yesterday. It is an exciting wine region w/ a lot of character & wonderful wine selections (mostly wine, especially sparkling). Here are a few key points:
Tidal Bay:
Is not a brand, it is a signature Nova Scotia blend, first wine appellation of the region (designated in 2012) regulated for quality & consistency. Many regional wineries produce Tidal Bay annually & from one to the other there will be a few signature winemaker differences but the general tasting notes are cool, crisp, lively and aromatic white wine.
Climate & terroir:
Cool climate w/ coastal breezes, mixture of sandstone & slate soil surrounded by hills & the world’s highest tides creates a microclimate ideal for white & sparkling wine 🍾. So naturally, sparkling wine is a must try when in the region 🥂
The views:
Even on this cold winter day (mid-March) the views were amazing. Rolling hills, a river a long the main road, distant views of the ocean & greenery in every direction. I cannot wait to see this valley in full colour.

Lightfoot & Wolfville Vineyards was our first stop where we enjoyed a delicious lunch w/ a tasting, me Sparkling, Aimée signature classics. This winery has a beautiful patio & an outdoor fireplace, I can only imagine how vibrant & breathtaking it must be on a warm day at sunset. The sparkling Rose is coming home with me 🥰.
Benjamin Bridge are perhaps the regions most beloved & well-known winery who have been innovating & developing the wine reputation of the valley for nearly 20 years. On this Sunday we lucked out & arrived just in time for a quiet hour of their seasonal cellar day allowing us to taste some rare bottles & chat through the appellation’s unique offerings. [save for dinner inspiration] Sometimes produce drives the meal. I found these blue crabs on sale at the local grocery store & immediately knew I wanted to do a crab boil at home.
Given the tools I have at home I had to do some “cheap hacks” on a combination of recipes found online but it turned out really good.
🌽Corn: boiled
🫛Okra: baked w/ olive oil, salt & pepper
🦀 Crab: boiled w/ salt & seafood seasoning (Old Bay or similar)

Serve on a large baking sheet, pour the source all over the mixed ingredients & get messy 😃! We paired this Sunday lunch w/ non-alcoholic Corona, the Sun Brew tastes just like regular Corona but without the alcohol kick.

The corn water can be used to water house plants or as a broth base (corn chowder on a different night?)
Crab water: add veggie left overs (I had a bag going in the freezer) & make crab broth. I’m saving mine to make a seafood chowder at a later time 🥣
